Rosemary, For Remembrance Tea Bread

Here on Fat Dog Farm, we honor important events with foods and medicinal herbs. In another blog, I share a story about loss and the custom of using rosemary as a symbol for remembrance.

When I created this recipe, I was experiencing the grief over the loss of a precious goat. Furry critters touch our hearts, playing integral roles in our connections with Mother Nature. For this tea bread, I have added two adaptogen herbal powders, Rhodiola and Astragalus root, to help our bodies cope with stress from life's challenges.

Apple mixture:
 1 large  organic apple
2 long sprigs of rosemary
juice and zest of 1 organic lemon
1 tablespoon of organic  butter

Cake batter base:
2 sticks of softened organic butter
1/2 cup organic sugar
3 farm fresh pasture raised eggs
1 cup almond flour
1 cup of organic flour
2 teaspoons baking powder
1 teaspoon of rhodiola and or astragauls root powder as a supportive herb during stress and life transitions 

Preheat oven to 325˚F. Butter or grease a loaf pan. Peel, core, and chop the apple and put in a saucepan with the one prig of rosemary, the lemon zest and juice, and 1 tablespoon butter. Cook on low heat for approximately 10 minutes until the apple is soft. Set aside to cool, removing the rosemary sprig once the mixture has cooled.

Put the cooled apple mixture into a food processor and puree. Combine dry ingredients in a bowl. Cream together the butter, sugar and eggs. Combine the butter mixture with the dry ingredients then pour into your prepared pan and smooth the top. Lay the rosemary sprig down along the center.

Bake the cake for 35-45 minutes.
